A Meal Every Kid Will Love:
I deal with a picky eater on a regular basis…he’s three and doesn’t know what’s good yet. Granted, his father would say the same about me. I’m from the South and we are big on making everything into a casserole! It wasn’t until meeting my husband and his family that I have become “cultured” in what makes “good” food, according to him, anyway. I try to cook things that take a small amount of skill so that I can look like a maestro in the kitchen, but sometimes you just have to make something that’s cheesy and kid-friendly that everyone will look forward to. The following is a recipe that I think any student would love, from elementary to college. A little goes a long way; one casserole could easily feed 12-16 people. I also recommend adding a “make-your-own” salad bar, a healthy addition that will make your meal stretch.
Beef Chili-Tater Tot Bake:
- 2lb ground beef
- 1 onion, chopped
- 16oz jar of chili starter (usually on the aisle with canned tomatoes)
- 15oz can of tomato sauce
- 14oz can petite diced tomatoes, drained
- 11oz can Mexicorn, drained
- 32oz pkg frozen seasoned tater tots
- 8oz pkg shredded Colby-Jack cheese
Preheat oven to 350. Cook ground beef and onion in a large skillet over medium heat until beef is browned and crumbled; drain well and return to the skillet. Stir in chili starter, tomato sauce, tomatoes and corn; spoon in to a 13×9 inch dish coated with cooking spray. Sprinkle with cheese and tater tots. Bake for 1 hour or until potatoes are golden brown.
